The Founder
Mizzi’s was founded in 2019 by John Michael Mizzi to create the best gourmet salt in the world. Some of his ancestors from the island of Gozo in Malta were artisanal salt makers for generations. So he believes salt is in his blood.
To the locals, John is known as “The Salt Man”.
The Salt Farm
After extensive research, John knew that Western Australia is the place to be for the best pure salt. Much of this ancient land once was covered by a great inland sea. This inland sea was rich in healthy natural minerals that comes through as a unique flavour in some of Mizzi’s salt. Fortunately, John found a parcel of land, 150 hectares, in Doodlakine 215km East of Perth. It is in the middle of an ancient paleochannel that is part of the Yilgarn River. The Yilgarn River is on the Yilgarn Craton and has not changed for thousands of years.
This paleochannel is vast and deep and is full of really old artesian saltwater. We drilled 50m underground and didn’t reach the bottom. One notable discovery is that with increasing depth, the saltiness of the water also increased. Luckily on our salt farm, we discovered several excellent saltwater springs and, we use these to fill our salt pans using environmentally friendly solar-powered water pumps.
Pictured above is one of our artesian salt springs. The blue-green colour is due to the rich mineral and trace element content. It flows gently from the underground artesian sea.
The Mining License
In June 2020 Mizzi’s were licensed to extract salty water from our natural spring within a 9-hectare parcel of land from the Western Australian mining department. The 9 hectares where the salt is collected lie within a dead salty basin. The salty basin contains no flora or fauna making our extraction process environmentally friendly. Our extraction process helps the environment by reducing the saltwater table in the region while we also plant more salt-tolerant native plants and trees attracting wildlife.

Our Food Processing Plant
John’s focus is to create the best gourmet salt in the world. In March 2020, Mizzi’s restored and renovated a 100-year-old shop in Kellerberrin. The renovation has transformed this old shop into a class 8 food processing facility to pack our gourmet salt for restaurants, food services and retail. In January 2021, Mizzi’s received the license to start packaging the salt from this facility.
Clay, Salt and Brine skincare products
While in Europe, John studied the healing and skin rejuvenating powers of quality clay, brine and salt. One advantage of this ancient land and underground artesian brine is rich in minerals and trace elements which give the clay excellent skin rejuvenation properties. So we are creating effective natural skincare products that are unique on the market.
Shown above is our brine pool from which we extract the minerals we use for our skincare products. The water is Green since it is rich in magnesium, potassium, calcium, zinc and other trace elements.
The Wild Plants At The Salt Farm
The salt farm is abundant in many wild salt-tolerant plants and trees. We use this flora in our salt infusions and skincare products. Included are Eucalyptus trees, the medicinal Gumbi Gumbi tree, Saltbush, Bluebush, Melaleuca (Tea Tree), Samphire and different Iceplants species

Our Dead Sea Pool
One of our spring pools contains 17% salt and minerals. We set aside this pool for our guests to swim and bathe. This pool’s high salt content amazingly allows you to float like your swimming in the dead sea. Our guests love this pool since minerals like magnesium are transdermal (absorbed by the skin) and help the skin repair and give a uniquely peaceful experience. The minerals in this pool also work to transform your skin and hair to be soft and silky.
